Vegan Chickpea & Broccoli Salad

This is a great dinner in itself or paired with a simple pasta. Its easy to prepare and tastes delicious.

Chickpea & Broccoli Salad
Serves 4

1 1/2 cups fresh chickpeas, cooked (or 1 can)
1 bunch broccoli, chopped and steamed
4-6 tbsp extra-virgin olive oil
1 tbsp black sesame
1 tbsp white sesame
1 tsp black peppercorns
1/2 tsp dried thyme
1/2 tsp cayenne pepper
1-2 tablespoons lemon juice
1 small handful mint leaves
Salt to taste

Place cooked chickpeas and broccoli in a large bowl. Drizzle with olive oil. Separately prepare the seasoning for the salad. Pound the black and white sesame, peppercorns, dried thyme and cayenne pepper together until it is a fine powder. Sprinkle over the chickpeas and broccoli. Add salt. Mix to combine. Add lemon juice and mint leaves. Mix to combine. Serve with pita bread or by itself. Both ways taste wonderful!
