Packing lunches for your kids can be a thought provoking process. It can be a challenging task to find food that your child will actually eat. Especially if your family happens to be Vegan. Here are some simple snack ideas that can be stored and easily packed. As an added bonus most of them are healthy!
1. Hummus Dip with Carrots & Pita Bread
Either opt for store-bought or make your own with The Simplest Hummus Recipe. Make sure to offer pita bread as well as veggies as if you send only veggie sticks, your child may not eat them.
2. Frozen Banana & Blueberry Popsicles
Blend 1 frozen banana and a handful of frozen blueberries until smooth. Add in about a tablespoon of almonds and blend again. Next blend in 2 cubes of ice. Pour into plastic popsicle containers and place an ice-cream stick in the center. Freeze for 2 hours and serve. No sugar added and delicious!
3. Almond Butter & Banana Sandwich
Spread almond butter on a slice of whole wheat bread. Add sliced bananas and a drizzle of honey (if your child has a sweet tooth) and top with another slice of whole wheat bread. Try using cashew butter for a variation.
4. Chickpea Pita Pockets
Mix chickpeas with chopped onions, coriander leaves, salt, extra virgin olive oil and a squeeze of lemon juice. Fill pita pockets with the chickpea mixture and a few baby spinach leaves.
